「玉米土豆丁炒雞丁」是常出現我家飯桌的家常菜。美國不比台灣,沒處買一包包剝好的新鮮玉米,蜂鳥家嘴又刁,拒吃冷凍蔬菜、罐頭蔬菜,我一向都把新鮮玉米剝了筍衣、洗淨,放入深鍋中,一排排把玉米粒直直削下去。 前幾天看到youtube的迅速剝玉米法,今天一試就成功,粒粒分明完整的玉米,份量更多,口感更佳,如果你也愛吃玉米,不妨試試! 食譜: 1.雞腿肉2隻切小丁,用醬油丶胡椒丶蒜頭醃至少1小時 2 Chicken legs/thighs cut into small cubes, marinate in soy sauce, white pepper and minced garlic for at least 1 hour. 2. 土豆一顆切丁,入滾水煮2分鐘 One small potato cut into small cubes. Boil for 2 mins. 3.新鮮玉米大2支(小3支) Follow YouTube to cut corn kernels from 2 large corn. 4. 炒鍋放2 茶匙油,翻炒雞丁至熟,依序放入玉米粒丶土豆丁,加塩調味。(也可加半杯水,水滾勾欠粉,這是台灣自助餐店常見的做法) Put 2 teaspoons of oil in the wok, stir-fry the diced chicken until cooked, add corn kernels and then diced potatoes in order, and season with salt. |
