營養素食沙拉菜: Haloumi Salad (羊奶酪沙拉菜)

This dish combines the buttery flavour and crisp texture of golden fried haloumi with the earthy taste of beetroot. Pepitas are the edible seeds of pumpkins, and are high in iron, omega-3 and omega-6. Paired with this nutty walnut oil dressing, the salad is high in fibre and set to delight vegetarians and meat eaters alike.
這道沙拉菜有滑感脆感的羊奶酪 外加泥土味的甜菜根
還有南瓜子是含高鐵 omega-3 omega-6
這道沙拉菜是高纖維的一道沙拉菜
是同時討好素食者和肉食者而設計的


Ingredients(成份):

1 bunch beetroot
(一把甜菜根 大概三棵 生吃是有點土味 卻是最有養份的 清肝)
1 packet haloumi cheese
(一包羊奶酪 炸奶酪超好吃 可以單獨給小朋友做午餐三明治)
500g mixed baby lettuce leaves
(綜合嫩沙拉菜葉/生菜 能治病又能改善體質 清腸胃)
½ bunch basil leaves
(半把希臘羅勒/九層塔 跟台灣的九層塔長像是有點不一樣)
50ml Olive oil
(橄欖油 用來炸羊奶酪 中火)
1 tsp Dijon mustard
(法國芥茉醬 微辣 有白葡萄酒成分 提味的佐料)
(一般我是不會用超市的沙拉醬 怕防腐劑和化學成分)
50ml red wine vinegar
(紅葡萄酒醋 我會改用新鮮的檸檬 怕工業醋)
100ml walnut oil
(核桃油)
150g pepitas, lightly toasted
(生南瓜子 微烤)
100g walnuts, toasted
(生核桃 微烤)

Method(作法):

1. Place beetroot in a pan of cold water and bring to the boil. Simmer for 30–45 minutes, depending on size, until just soft. (Use a skewer to test.) Allow to cool in skins. Peel and cut into wedges.
把甜菜根煮30-45分鐘 煮到軟 用烤肉叉試 再去皮 切成瓣

2. Heat a frypan. Add a dash of olive oil. Slice haloumi into 2cm-thick pieces. Fry for 2 minutes each side, or until golden. Set aside.
把羊奶酪切成兩公分寬 然後用橄欖油中火炸成黃金色(奶酪的味道像鹹鴨蛋)

3. In a small bowl, whisk the mustard, vinegar and walnut oil together. Season with salt and pepper.
把法國芥茉醬 紅葡萄酒醋 核桃油 加一些鹽和黑胡椒 拌在一起 做成沙拉汁

4. Combine beetroot, lettuce and basil with walnut dressing, then divide among four bowls. Top with haloumi, pepitas and walnuts.
最後把所有的東西都放在一起伴 四人份哦!
