普洱茶放置過程中,有時會出現“金花”現象。
金花是什麼?
按照中國國家標準:金花是灰綠麯黴的金黃色孢子,金花越多品質越好。金花能分泌澱粉酶和氧化酶,可催化茶葉中的澱粉轉化為單糖,催化多酚類化合物氧化,使茶葉湯色變棕紅,消除粗青味。金花...冠突散囊菌,是益生菌,目前只有黑茶類的茯茶才會要求製作時刻意培養此菌種,要一定的茶梗與葉片黃金比例且鬆緊適度以營造空間利於滋生,這道工序又稱"發花",是屬於國家機密,優質茯茶金花普茂,日本人早已對此茶的"益生菌"視為珍寶且於十年前就引進供其國人飲用。
金花的作用:金花能產生一種酶,促進茶葉中的蛋白質,茶多酚的轉化成紅褐色的特殊精華物質,這種物質甘甜爽口,能改善人的陰陽平衡,增強人體機能,抵擋疾病入侵。金花是沒有營養的,它的作用是產生一種酶來幫助茶葉中的蛋白質,澱粉,多酚類物質的轉化成對人體有益的物質。
然而令人擔憂的是,不法的商人和加工者可以以有毒的黃麴黴冒充冠突麯黴,普洱茶發酵或者存儲不當,特別是在南方,容易使漂浮其中的黃麴黴大量繁殖,外觀也呈黃色片狀分佈,在人為的作用下,也可以造成“金花”的樣子,但黃麴黴是完全有害的,研究表明黃麴黴與消化系統腫瘤,如肝癌的發生有著密切的相關性,花生、瓜子、米麵等食品保存不當在南方容易出現黃麴黴,黃麴黴毒素耐高溫,無法經過高溫煎炸烹調消除,而且一旦進入人體,會結合在肝細胞核內,將黃麴黴的基因片段鑲嵌進我們人體肝細胞的基因裡,從而造成原癌基因的啟動轉化為癌基因,如果此時免疫力正好長期低下,癌細胞就可以存活下來伺機作亂。
黃麴黴還是和冠突麯黴菌落表現不同的,在生長期,黃麴黴一定有菌絲形成,但在休眠期只有孢子,所以有菌絲一定不是冠突麯黴;此外黃麴黴的孢子是呈煙霧狀,一吹可以散落,這也是區別之一。花與黴菌在外形上不好分別,常人難以分辨,最好的辦法就是從外形來看,黴菌是絲狀成片分佈,呈黃色,通常分佈在餅面一角,黴菌在14-21天時面積就可達4CM-6CM,高約0.5-1cm,茶體本身黴變發粘,葉間介面不清楚,茶色深黑。黴變過又乾燥存儲的茶,黴菌體幹縮,形狀不規則,且色呈褐色。
而金花通常在茶餅或磚內部,成點狀顆粒,呈金黃色,茶面分佈時偶有十數個金花同處分佈,但花體清晰,花間介面清楚,兩種茶沖泡後區別明顯,黴變茶湯色碳黑或棕黑並渾濁,味道有極強黴變的嗆人氣味,4-5泡後湯色極淡且依就渾濁,而有金花茶的茶味更適口,並有圓順爽滑口感,有金花特有甜香,茶色紅亮,不混湯且耐數十泡味不減而色不衰。
然而大眾一般很難從專業的角度鑒別,因為品質不僅取決於產品品質和產品真偽,還取決於良好的倉儲。
在有些普洱茶專著裡有介紹,微霜狀的“白黴”,在普洱茶裡有“貴族之黴”的美譽,經乾燥退霜處理一段時間後,茶品滋味醇和、甘滑度明顯增強。黃色的“金花黴”數量多少,歷史上曾作為“老青茶”品質鑒定的重要指標。但黑色的黴變對茶品卻有不利的影響,常有“麻,掛喉,叮喉”感,使人不悅。其中的奧秘,只有待專家進一步研究了。
