GRIOTTINES® Madeleines
Recipe created by Olivier BAJARD,
World Champion in the Art of Dessert,
MOF in Pâtisserie
INGREDIENTS
(50 x 5 gram madeleines)
Milk: 20 g
Honey 25 g
Fine salt 1 g
Caster sugar 40 g
Whole eggs 45 g
Plain flour (type 55) } 65 g
Baking powder } sifted together 2 g
Melted clarified butter 65 g
Griottines: 50
Mix the eggs, milk, sugar and salt.
Sift the sifted flour and baking powder onto the mixture.
Leave to rest for 30 minutes.
Fold in the melted butter, then immediately pipe the mixture into the
moulds.
Place a Griottine in the centre of each mould.
Bake at 165°C for 7 minutes.
If desired, flavour the madeleines with pistachio paste, lemon zest etc…

味道真好 ! 
但我的 麵漿較稀,櫻桃都沈下去了
還有怎麽孔洞比較大 !
孔洞大的兇手找到了 !

原來老妻換了一缶 double acting 的 baking powder
使用量要較普通 baking powder 少 1/3 ~ 1/2
偶沒注意就熊熊用下去 , never again !
