我平常不太吃這種乳製品的. 但昨天我突然想吃, 於是到central market吃個過癮. 今天又想吃, 於是我先生說, 很好做喔, 可以自己做!
於是他看了幾個食譜. 我選了這個比較簡單又不用heavy cream的食譜. 真的很好吃喔...我只是用pasta 和 alfredo sauce. 為了不讓我的pasta太簡單, 我加了新鮮番茄進去.

1 杯 全脂牛奶, 或1%牛奶 (無脂也可以, 但會比較不濃)
1 1/2 湯匙 牛油 (我是用無塩的, 有塩的應該也可以, 但會比較鹹)
1 1/2 湯匙 白麵粉
3 湯匙 parmesan cheese
1/2 茶匙 蒜末 (或適量, 因為我不喜歡太多蒜末)
適量黑胡椒 (不用再加塩, 因為起司本身就會鹹)
作法:
1 要有耐心(其實真的很好做), 慢慢加入所有的材料!
2 用中鍋, 中火把牛油變軟.
3 用打泡器打入麵粉.
4 混合體會變黃.
5 慢慢加入牛奶, 打均. (還是中火)
6 讓牛奶變熱. 通常3-5分鐘
7 如果煮久一點, 會變更濃 (還沒加起司).
9 慢慢加入起司, 打均. 直到起司全部溶化.
10 加入蒜末和黑胡椒.
11 再煮個2分鐘, 即可.
12 把sauce加入煮好的麵/菜.
1 cup whole milk or 1% low-fat milk (skim may be used, but creates a thinner sauce)
1 1/2 tablespoons butter
1 1/2 tablespoons flour
3 tablespoons parmesan cheese
1/2 teaspoon minced garlic
1 dash black pepper (it doesn't need salt)
Directions:
1 The key here is patience, add all ingredients gradually!
2 Melt butter in sauce pan on stove top with medium heat.
3 Gradually whisk in flour.
4 This will create a yellow paste.
5 Gradually add milk, whisking until incorporated and no lumps are present.
6 Continue to whisk until hot. (Usually 3-5 minutes.)
7 The longer you cook the base (without the cheese) the thicker the sauce will be.
8 Add parmesan slowly, again whisking until incorporated.
9 Add crushed garlic and pepper.
10 Cook for 2 minutes or until cheese is melted.
11 Remove from heat. add the sauce to cooked pasta.
