食安權威文長安表示，直接食用涼拌豆腐，會吃進自由基，進而導致身體慢性發炎。 豆腐營養價值極高，但食安權威文長安表示，過去的豆腐使用石膏作為凝固劑，現在市售的嫩豆腐則改用葡萄糖酸內酯(GDL) 作為凝固劑，它可讓豆腐更軟嫩，但會產生自由基。

因此，他建議，民眾應將豆腐烹煮後食用，不建議吃涼拌豆腐，以降低自由基對健康的傷害，例如導致細胞失去正常功能，導致慢性發炎。

前衛生署食品衛生處官員、現輔大食科系講師文長安，在健康頻道中分享食品安全內幕，揭開反式脂肪、複方添加物等法規漏洞，提醒民眾如何從標示與食物型態，辨別出那些「合法卻不一定健康」的加工食品。

他以豆腐為例表示，豆腐是高營養價值的豆製品，但製程中需使用凝固劑，過去使用天然礦物質「生石膏」，含鈣量高，做出來的豆腐質地綿密，營養價值高。

之後採採鹽滷作為凝固劑，鹽滷是從海洋中層水萃取出的凝固劑，含有較高的鎂。 值得注意的是，現在改用葡萄糖酸內脂作為凝固劑，它是從葡萄糖（全糖）氧化變成葡萄糖酸，轉化過程中會產生自由基，因此有害人體健康。文長安表示，這種豆腐需要經過加熱才能消除自由基，「因此，涼拌豆腐的吃法就要考量是否適當！」
