照著"frame>by>frame baking"本書做了紅蘿蔔蛋糕, 覺得非常好吃. 而蛋糕是連糖霜都沒上的那種. 於是我想試試"馬芬"版. 兩種版本我都有放, 看各人喜好囉.
Ingredients (原版的簡單版, 因為我沒加橘皮或糖霜)
- 1 1/4 cups self-rising flour (沒有self-rising, 直接用 1 1/4 cup all purpose + 1 3/4 tsp baking power + 1/2 tsp salt 來取代即可)
- 1 teaspoon baking soda
- 1 tsp ground cinnamon
- 1/2 grated nutmeg
- 3/4 cup vegetable oil (or sunflower oil)
- 3/4 brown sugar
- 3 eggs
- 1 1/2 cup greated carrots
- 1/2 cup raisings
- 1/3 cup walnut pieves
Ingredients (我自己的改量版, 適用喜歡淡糖和紅蘿蔔的人, 雖然原版本來就沒有很甜, 但我自己的改量版刻意的又少加了點糖.)
- 1 1/4 cups self-rising flour (沒有self-rising, 直接用 1 1/4 cup all purpose + 1 3/4 tsp baking power + 1/2 tsp salt 來取代即可)
- 1 teaspoon baking soda
- 1 tsp ground cinnamon
- 1/2 grated nutmeg
- 3/4 cup vegetable oil (or sunflower oil)
- 2/3 brown sugar
- 3 eggs
- 2 cup greated carrots
- 1/2 cup raisings
- 1/3 cup walnut pieves
Directions for Carrot Cake (9*9)
- Preheat oven to 350 F (180 C). Grease a 9 inch/23cm square cake pan.
- In a medium bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- In a large bowl, beat together oil, sugar and eggs until smooth. Mix in carrots, raisins, and walnut pieces. Then gradually blend in the flour mixture. Spoon the mixture into the prepared cake pan.
- Bake 40-45 minutes in the preheated oven, or until a toothpick inserted in the center of a cake comes out clean. Allow to sit 5 minutes before removing from pan. Cool on a wire rack.
Directions for Muffins (make about 12 large muffins or 18 meddium)
- Preheat oven to 350 F (180 C). Grease a muffin pan (12).
- In a medium bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- In a large bowl, beat together oil, sugar and eggs until smooth. Mix in carrots, raisins, and walnut pieces. Then gradually blend in the flour mixture. Spoon the mixture into the prepared cake pan.
- Bake 20-25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing from pan. Cool on a wire rack.
