Apple Muffins 蘋果馬芬

今天晚上試做了蘋果馬芬. 馬上就吃掉一個. 很好吃喲... 不過, 現在卻撐的要命... 這類點心還是白天吃比較容易消化一點.   其實我並沒有在Muffin裡加任何的核桃. 照片裡的核桃是烘烤中途加上去裝飾的.  

Apple Muffins  (make 12)

Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 tsp cinnamon

  • 1/2 cup butter

  • ½ (1/3 is fine, too) cup white sugar, ½ brown sugar

  • 2 eggs

  • 1 1/4 teaspoons vanilla

  • 2 cup chopped, 1 cup shredded apples (with skin*)   - Chopped apple 份量多一點才能在muffin中吃到果粒, 光用shredded apple會完全吃不到果粒(事後, 我居然有朋友說他不喜歡有果粒的. 所以對他來說, 用Shredded apple做會比較好)

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.

  2. In a medium bowl, mix flour, baking powder, baking soda, cinnamon and salt.

  3. In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.

  4. Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

* 我的蘋果只去核, 沒削皮就下去切.  皮在烤的過程中就會不見了(吃不出來).
