This means they were forced out of mom's kitchen to study, study, study to get a good education and higher degrees. They eventually settled down in some foreign countries. And when they had to cook for their husband and children they usually pick up whatever is convenient and available. The women in Taiwan are so lucky because there are good food available in every corner of the street and also in mom's home. They really don't know a wok has to be seasoned. Hehehe! Good news is their daughters are reading your books! They begged me to post the video so they could learn how to season a wok. For me, I have a similar story. (I always get hand-me-down well seasoned cookwares from my mom, my mother-in-law or students who graduated and left school.) I used 拋鍋 on a gas stove in our old house. And now, I use Hsiao-ching's wok. And I learned how to season a wok from your book. Love, Ellen |
