Dragonfruit: Two to five days after the fruit's skin begins to turn from green to red, it is ready to pick.The fruit is round with prominent scales. Dragon fruit skin can be yellow to pink or red. The thin rind encloses a large mass of sweetly flavored pulp and small black seeds. The flesh can be white, red, or magenta in varying degrees depending on the variety. The fruit is juicy, with subtle fruity flavors. Dragon fruit is usually eaten chilled. The fruit is sliced open, served open-faced, and the pulp is scooped out with a spoon. It is also used to flavor drinks and pastries, and can be made into wine. Durian: Durians can have an unpleasant, even overpowering, odor. They are often banned from hotels, airplanes, and local buses. The fruit can grow as large as 30 centimetres (12 in) long and 15 centimetres (6 in) in diameter, and it typically weighs one to three kilograms (2 to 7 lb). Its shape ranges from oblong to round, the colour of its husk green to brown, and its flesh pale yellow to red, depending on the species.The edible flesh emits a distinctive odour, strong and penetrating even when the husk is intact. Some people regard the durian as fragrant; others find the aroma overpowering and offensive. The smell evokes reactions from deep appreciation to intense disgust. Jackfruit: Jackfruit is the largest tree-borne fruit in the world, reaching 80 pounds in weight and up to 36 inches long and 20 inches in diameter. The exterior of the compound fruit is green or yellow when ripe. The interior consists of large edible bulbs of yellow, banana-flavored flesh that encloses a smooth, oval, light-brown seed. The seed is 3/4 to 1-1/2 inches long and 1/2 to 3/4 inches thick and is white and crisp within. There may be 100 or up to 500 seeds in a single fruit, which are viable for no more than three or four days. When fully ripe, the unopened jackfruit emits a strong disagreeable odor, resembling that of decayed onions, while the pulp of the opened fruit smells of pineapple and banana. Mangosteen: The mangosteen is very difficult to grow and bruises easily if roughly handled. It has a thick rigid skin, dark purple in color. The interior contains 6 or 7 segments of juicy white flesh, each containing a large dark seed. The flesh is sweet and slightly tart. Rambutan: The rambutan is related to the lychee, and has a similar fruit. The skin is fairly thick, covered with soft "hairs", and is available in red or golden colored varieties. There is no sap in the skin. The flesh is sweet and white. It surrounds an oval seed, and may cling to the seed in some cases. It is a good source of vitamin C. The rambutan is eaten fresh. Twist the skin with both hands to release the fruit. Rambutan is not so juicy as to drip while you eat it and will not make a mess of your hands. Starfruit (Carambola): The starfruit is a native of southeast Asia. When sliced, the cross-section is shaped like a 5-pointed star. The skin is waxy and green, turning yellow as the fruit ripens. The outer edge of each ridge is bitter, and should be removed before eating. The central pith and seeds should also be removed. When fully ripe, the fruit remains firm.
