沸 contains bigger white sand like grains that are visible to the naked eye & 匂 contains smaller grains that are invisible to the naked eye .

沸 can be created by higher temperature (800 o C) or higher carbon content & 匂 can be created by lower temperature (800 o C) or lower carbon content .

早期中國山西出產的折疊鍛鐵因為含碳量低，不但刀刃硬度不夠，也要藉助於化學反應來模仿沸與匂，但是這幾年含碳量顯然有改善，刀刃硬度似乎已符合需要，就連沸與匂也不會擦擦就沒了。
