Red Velvet Cake W/Beets 紅絲絨蛋糕 (含中英文網路食譜)

2011/05/12 我未曾吃過 Costco 的紅絲絨蛋糕,  不知味道如何??
我嘗試的這兩個食譜,   有巧克力的  很油 ,  但是很好吃。  以下兩個食譜都沒有人工色素的哦。Red Velvet Cupcakes with beets. The red ones are without chocolate. 4/15/11


甜菜巧克力蛋糕

225 g 奶油
250 g 黑糖
3 個蛋
112 g 半甜巧克力溶化
340 g 甜菜泥
5 ml 香草
250 g 中筋麵粉
9 g 蘇打粉
2 g 鹽
做法:
1.所有的粉類材料過篩
2.所有的液體類材料混勻,包括甜菜泥
3.粉類材料加入液體類材料,快而輕的拌勻
4.分裝至小蛋糕模,華式350度,烤25分香味溢出即可,竹籤插入不沾即可。

Mascarpone Frosting:
Ingredients:
3/4 cup chilled heavy cream
¼ cup confectioner’s sugar
1 cup mascarpone cheese
1 tsp vanilla extract

Method:
To make the mascarpone frosting, beat the chilled cream till stiff. Add the sugar and vanilla extract and beat till well incorporated.
Using a spoon, break the lumps in the mascarpone. Add this to the whipped cream, and beat on slow speed just long enough so that the mascarpone is well incorporated into the cream.
This frosting pipes well but stays soft, so it would be a good idea to refrigerate them until ready to be served.

RVC with can beets. No food coloring added ( lemon juice was added to maintain the acidity for the redness not turning to brown). The redness of the can beets looks more of the strawberry cakes. Recipes are from internet.

Red Velvet Cake from internet. It doesn't taste like chocolate cakes, but more beety.
Ingredients:
1 ¼ cups all purpose flour
1 ¼ cup granulated sugar
1 1/2 tbsp dark cocoa powder
1 1/2 tsp baking powder
¼ tsp salt
3/4 cup fresh pureed beets
1/3 cup oil
¼ cup apple cider vinegar
1 1/2 tsp vanilla extract

To make the cupcakes, first whisk together the flour, sugar, cocoa, baking powder and salt in a bowl till well mixed. Keep aside.
Put the puréed beets, oil, apple cider vinegar and vanilla extract into another bowl and lightly whisk together till mixed well.
Pour this into the bowl with the dry ingredients and mix just enough to combine. Divide the batter equally between 12 cupcake tins lined with paper cups.
Bake the cupcakes at 350F(180C) for about 20 to 25 minutes. A skewer/ toothpick inserted into the center should come out clean once they’re done.
Cool completely and decorate with frosting of your choice.
