義大利杏仁脆餅 (Almond Biscotti)

材料: 1/2杯…杏仁(toast 5分鐘, 切成小碎塊) 1-3/4 杯…麵粉 1小匙…泡打粉 3/4杯…細砂糖 1/4小匙…鹽 1/4杯…融化的奶油 or 蔬菜油 2個…蛋 (大) 1大匙...牛奶 2小匙…香草精 2小匙…杏仁精 1個…檸檬皮末
做法:
preheat oven to 350F or 160C
- In a large bowl, mix together oil and sugar until well blended, mix in the vanilla and almond extracts, then beat in the eggs one at a time.Combine flour, salt and baking powder in another bowl.
- Stir the dry mixture (2) into the wet mixture (1) with a fork, and then mix in the almond pieces.
- Line the cookie sheet with parchment paper. Divide dough into two; Shape two logs on the cookie sheet (put some flour on your hand to avoid the dough stick to your hand).
- Bake for 35 minutes or until logs are light brown. Remove the logs from the oven, and let it cool for about 10 minutes.
- Cut logs on diagonal into thick slices. Lay the slices back
to the cookie sheet on their sides. - Bake the cookies for 10 more minutes or until dry.
