Mascarpone Mousse and Blueberry Ladyfinger Cake 義大利馬斯可烹尼起司慕斯與藍莓手指餅乾蛋糕

Image the supreme shortcake, light, creamy, rich, beautiful, berry-bedecked, and beyond delicious – and now imagine it even better. If you’ve got a great imagination, then you’ve got an idea of how appealing this cake is. Not really a shortcake as we know it to be, but rather two soft golden ladyfinger layers sandwiching plump poached blueberries and a feather-light mouse of mascarpone, Italy’s finest triple-cream cheese. The cake is wreathed in Italian meringue, encased in a band of ladyfingers, and topped with a circle of jammy sweet blueberries. It is a glorious confection.
