今年二月瑞士的氣候出奇的妙?日內瓦湖區夜裡嚴寒但白天幾乎天天大艷陽. 碰上學校放一星期例行的滑雪假, 凡是上山的家庭因雪況特佳、不刮風、日暖個個都賞雪、滑雪得極開心. 有人甚至大讚這是一輩子以來, 老天爺唯一賞賜這麼一次整整一個禮拜的最完美滑雪假期. 這陣子一直跟朋友們檯槓說如果某個週末天氣好, B就號招來一頓戶外的冬日火鍋餐. 要知道日內瓦湖區二月份白天的平均氣溫是介於-2至7度C之間, 那冷的程度都讓人沒事儘量乖乖縮龜在家, 哪來癡人夢話閒著喊餓偏要凍在外頭用餐? 食物急速冷卻怎麼難吃不說, 光穿一團衣服抖動鏟東西吃的呆樣, 就可能令人哈腰氣結呵成不倒翁. 結果週五臨時發e-mail邀請Sunday Fondue lunch, 今午還真的被B辦成了!16度C的氣溫結合大太陽的威力, 我們11個有吃有喝又有聊瘋了一下午....破了冬天開陽臺的記錄! 而且晚間的新聞報導更特別提到, 今天午間的氣溫是40年來二月份創新高記錄.
I N G R E D I E N T S I N S T R U C T I O N S Rub inside of a 4-quart heavy pot with cut sides of garlic, then discard garlic. Add wine to pot and bring just to a simmer over moderate heat. Stir together cornstarch and kirsch in a cup. Gradually add cheese to pot and cook, stirring constantly in a zigzag pattern (not a circular motion) to prevent cheese from balling up, until cheese is just melted and creamy (do not let boil). Stir cornstarch mixture again and stir into fondue. Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes.
