Sweet potato pancakes tower Here is how to make it 1. steam the sweet potato 2. smash the sweet potato,wait until it's cool 3. 2 tablespoons pancake mix 4. one whole egg 5. Whisk all together 6. Brush a nonstick skillet or griddle with butter and heat over medium heat 7. Add batter and cook until bubbly on top and golden on the bottom, about 4 minutes.
Flip and cook until golden on the bottom, about 2 more minutes.
