Apple Crumble Cheesecake
Ingredients:
Apple & Cheese Filling:
- 1 apple
- 1-2tbsp butter
- 227g softened cream cheese
- 58g sugar
- 2 eggs
Crumble:
- 60g plain flour
- 33g sugar
- 33g soften butter
- 1/8tsp cinnamon powder
- 1/8tsp baking powder
Cake Base:
- 70g digestive biscuit
- 28g soften butter
Method:
Prepare a 6-inch round wrapped cake ring & grease it.
Cake Base:
- Crush digestive biscuits to fine powder.
- Combine with butter & rub it.
- Use a tablespoon or potato masher to spread.
- Press the biscuit mixture over the base. Set aside.
Crumble:
- Combine all ingredients in a mixing bowl & rub it.
- Stop rubbing until it turns sandy.
- Put in the refrigerator.
Apple & Cheese Filling:
- Dice the peeled & cored apple.
- Fry with butter.
- Set aside to cool.
- Separate egg yolks & egg white.
- Stir egg yolks & cream cheese until smooth.
- Beat egg white & sugar until peak form.
- Pour the meringue into the cheese mixture in three separate times.
- Add the cooked apples & mix it well.
- Pour into the cake ring.
Sprinkle the crumbke evenly on top.
Put in the 170℃ preheated oven & bake for 40 mins.
