The recipe of Chinese beef soup

我的德國朋友喜歡吃牛肉麵,但是德式的燉牛肉和

中式的燉牛肉不一樣,要用英文把燉牛肉的配方和

方法詳細說明,還真的考倒我!胡亂寫寫,連自己都

看不懂,更別希望他看的懂還可以按步燉煮!

Herewith I write down the recipe of Chinese beef
soup for your reference.
 
Step I: Ingredients Preparation
 
  1. Beef tendon: ca.1kg, cut into 2 cm cube
  2. Tomato*2 or 3   cut to  piece
  3. Onion*1 cut to piece
  4. Apple*1 cut to piece        2~6   just cut to
                                                      normal piece
  5.  Patato*2 cut to piece                not too small
  6.  Carrot *1 cut to piece            
  7.  2 star anise
  8. 1/2 Tea spoon crystalized sugar
  9.  2 Tea Spoon soy sauce
10. 3 slices ginger
11. Water enough to cover all ingredients
12. 1/2 bottle red wine
 
Step 2: Cookiing
 
1. Prepare boiling water in a pot .
 
 
2. Right after water is boiling, put beef tendon
    cubes quickly into boiling water and remove
    from water after ca. 2 minutes.
 
 
3. Prepare other pot preferably at the same time
    with the first pot  (this pot shall be big and the
    water level is at 70% of full level to give room
    for boiling), and put all above  items 2-11 into
    pot and begins to cook with big fire.
 
 
4. You can put all beef tendon cubes into pot
     right after the water becomes hot (a few
     minutes),  and cook (with pot cover) till
     water is completely boiling (may be ca.
     20-30 minutes).
     Now you can pour the red wine into the pot,
     then turn the fire setting to small fire to
     maintain the water at small boiling condition
     (usually you may have to open a small gap
     with pot cover to avoid water bubbling over
     the pot) and keep such cooking condition for
     another ca. 40 minutes.
 
 
5. We normally just switch off the fire now,
    and keep the pot cover there (completely
    close) for another 40 monutes to let beef cube
    becoming easy to chew.
 
 
6. After that you can consider to taste the beef
    if the beef is already tender, then it is done.
    (or if still tough, you can consider to extend
    the time at last step of item 5).
